This recipe is a warm and comforting soup perfect for cold days. The recipe traditionally used fermented duck blood (鸭血) and tofu puffs (豆腐泡), though if you don't have those ingredients at your disposal, you can also make it with only bok choy.
- Vermicelli Noodles
- Water
- Bok Choy
- Chicken Stock Powder or Salt
- Duck Blood (optional)
- Tofu Puffs (optional)
1. Depending on the vermicelli being used, soak it in water for a few minutes while preparing the rest of the soup.
2. If including fermented duck blood, cut it into rectangular pieces.
3. Add three cups of water to a pot and bring it to a boil.
4. Add bok choy, cubes of duck blood, and tofu puffs (if using) to the pot and cook for around 5 minutes.
5. Add the vermicelli noodles and let it cook for about 30 seconds.
6. Add chicken stock powder and/or salt to taste, making sure to let the soup sample cool enough before trying it.
7. Serve hot (scoop the vermicelli out first, then the soup, and then the toppings can be arranged nicely on top), garnish with chopped scallions if desired, and enjoy!
