This recipe is modified from Kroll's Korner. The translation of this cookie's name into Chinese isn't very accurate as there isn't a set name for s'mores in Chinese, but it roughly translates to "marshmallow (棉花糖) cookie (饼干)."

- Unsalted Butter (softened)
- Sugar (granulated and brown)
- Baking Powder
- Baking Soda
- Cornstarch
- 1 Egg
- 1 Egg Yolk
- Vanilla Extract

- Marshmallows
1. Preheat the oven to 375°F.
2. In a large bowl, whisk together 2 cups of all-purpose flour, 1 tsp cornstarch, 1/2 tsp baking soda, and 1/2 tsp salt.
3. In a separate bowl, cream together 1/2 cup of softened unsalted butter, 1/4 cup of granulated sugar, and 1/2 cup of brown sugar until paste-like.
4. Beat in 1 egg, 1 egg yolk, and 1 tsp of vanilla extract.
5. Gradually add the dry ingredients to the wet ingredients (recommended 1/4 cup at a time), mixing until just combined with a spatula.
6. Fold in around 5-6 sheets of graham crackers and a similar amount of crushed chocolate bar, leaving a little for garnish.
7. Split the batter into 8 roughly even portions (or more if you desire) and shape them into cookie dough balls. Cut 4 marshmallows in half, create a dent on top of each cookie, and press the marshmallows into the cookies. We decided to place one graham cracker and one chocolate bar chunk on top of each marshmallow.
8. Bake for 10-13 min at 375°F until the dough appears golden-brown, and let it cool for 15 minutes before eating. Enjoy!
