Hand-shredded chicken, as its name suggests, is a Chinese dish made with tender, chicken breast shredded by hand and topped with a flavorful sauce. It's special because of its unique texture, which is time consuming but worth all the effort in the end.
- Chicken Breast
- Scallion
- Garlic
- Crushed Red Pepper
- Soy Sauce
- Vinegar
- Sugar (optional)
1. Submerge two chicken breasts in cold water in a pot, and boil it for 10-15 minutes until fully cooked (try stabbing a chopstick through to check if there is any blood).
2. Remove the chicken from the pot and let it cool for a bit.
3. Once the chicken is cool enough to touch, shred the chicken by hand into small shreds depending on how fine you want your chicken pieces to be.
4. In another smaller container, combine chopped scallions, minced garlic, and crushed red peppers.
5. Heat some oil up in a pan until it begins bubbling, and pour the boiling oil over the current sauce mixture for stronger flavor.
6. Then add 2 tsp soy sauce, 1 tsp vinegar, and a pinch sugar if you would like, and mix.
7. Pour over your shredded chicken and mix well to spread the seasoning evenly.
8. Enjoy your delicious hand-shredded chicken!
